Kinmon Sekaitaka Junmai Ginjo was released by Koyama Honke Shuzo to commemorate the 200th anniversary of its founding that brings together the sake brewing techniques that we have honed to pursue a timeless taste. The steaming rice and koji making to achieve a refined ginjo aroma, a rice flavor that spreads in the mouth, and a crisp throat feel. The steamed rice is hard on the outside and soft on the inside, making the rice grains hard on the outside and soft on the inside, which makes it easier for microorganisms to become active and to break apart. The koji is made from total tsukihaze koji, which actively produces saccharifying enzymes and brings out the ginjo aroma and rice flavor during long-term low-temperature fermentation.
